Two very simple to fix dishes, that make a large amount and can be refrigerated or frozen for meals throughout the week.
The soup is courtesy of Susan Voisin of Fat Free Vegan blog .... a most unusual combination of flavors makes this soup not only super tasty, but thanks to the filling black beans, a meal in itself.
Vegan Dad posted his luncheon me*t recipe some time back, and I've only now gotten around to trying it. Makes a nice large amount, and like the soup, easy to fix. It needs an hour to steam, and another hour to bake, but your actual work time is very quick: blend all the wet ingredients in a blender, add to 2 1/2 cups of wheat gluten and mix. I had the food processor do all the mixing ... I just put the wheat gluten into the food processor, poured the liquid ingredients from blender right into the food processor while it was running, and a few minutes later, had a nice, smooth seitan dough formed.
Roll it into a log, wrap in parchment, then in foil, place in a steamer, and steam for an hour. Then transfer to the oven and bake for another hour.
